A question for the Unity employees out there, what kind of redistribution license are the standard assets under? Specifically, can they be redistributed in *.unitypackage form in an open source unity game?

You can use Unity's standard assets and the assets from tutorials supplied by Unity in any way you like unless otherwise stated. There's no problem using them in your own games, although you should bear in mind that everyone else is allowed to do this as well.

So this includes assets from the bootcamp demo or car tutorial as well?

Any demo or tutorial project supplied by Unity is offered with the expectation that people will incorporate bits of it into their own work. Wherever the original source assets are available, we are happy for you to make use of them but you are not allowed to hack a standalone or webplayer to extract stuff that way ;-)
